Thanks, I can get Pink here in FL pretty cheap frozen, but it's nothing like the good varieties we had in AK. FWIW, I know it's not politically correct, but the indians who sold me my first "indian candy" had it marked "squaw candy".. Didn't seem at all offended.

Do you know what species of salmon that was? I usually avoid farmed fish of any type. But the open water (pens) farmed salmon might be worth a try.

Looking good Leah. Do you brine them or anything? Some say to bleed mackerel right away by cutting the head & tail and cleaning the cavity out? I always loved smoked mackerel but never smoked any myself. Usually just broil with some wine & butter sauce & flaked almonds.

Pink is pretty cheap at wallys. @4$ a lb. I smoke it sometimes. I found the skinless filets take very little brine time. Very good. They sometimes have it skin on too. The salmon run is pretty sparse here in fl. :o)

What species of salmon is that (farm raised)? I've been getting some pink (wild) at Walmart. Not bad, but not my favorite. The salmon run here in FL has been pretty sparse the last few years.. Must be that global warming ...

I have a old folding lc smoker that I converted to propane canister. Used to pack in my baggage to Alaska and smoke the salmon right by the creek. Made some great stuff with that smoker.

I too grew up on catfish,bass etc. With some saltwater trout and a few others. In florida. I love wild caught cats. But don't care for farm raised. The taste and especially the texture don't compare. I don't even like pond raised that are fed pellets. My favorite FW fish are walleye, crappie...
I totally agree on farm raised. If I can't get wild, I get something else. Fish, shrimp etc. fortunately I haven't had any problem finding wild. I also catch a lot of my eating fish. But
