Smoked Haddock (the best ever) from one of our Fabulous Members!

Every time I see okra I recall when I was a kid in Florida working as a cowboy.  We don't call them roundups here.  They're "cowhunts".  An old cowboy talked about food a lot and had some philosophical views on the subject..  Around the campfire one  night he said.. "Now you take "okrie"...

Smoked Haddock (the best ever) from one of our Fabulous Members!

Very nice! Thanks Leah.  Haddock is one of my favorite fish.  I've come to the conclusion, you  can make some fish better by smoking and certain brining & seasoning methods, but the real key is starting with good fish.  I've finally made some of the frozen pink salmon (in AK, they feed them to...

    Smoked Indian Candy (salmon)

Thanks,  I can get Pink here in FL pretty cheap frozen, but it's nothing like the good varieties we had in AK.  FWIW, I know it's not politically correct, but the indians who sold me my first "indian candy" had it marked "squaw candy".. Didn't seem at all offended.  Greg

    Smoked Indian Candy (salmon)

Do you know what species of salmon that was?  I usually avoid farmed fish of any type.  But the open water (pens) farmed  salmon might be worth a try. Thanks, Greg

Smoked Striper HEAD & Smoked Mackerel!

Thanks so much for the tip on the Winos & woodchips group.  Look forward to more of your culinary masterpieces there.  I love the wine, but afraid my taste is rather unsophisticated.  Maybe I can expand my horizons with some serious wino advice . Greg

Smoked Striper HEAD & Smoked Mackerel!

Very interesting Leah.  I'd eat something  that looks back at me.. but not for breakfast .  I had a French friend many years ago who was a perfume maker and had moved to FL from France to grow a certain type flower for perfume.  He swore that the head was the best part of the fish. He stewed it...

    Holy Mackerel! (Amazing Smoked Mackerel)!

Looking good Leah.  Do you brine them or anything?  Some say to bleed mackerel right away by cutting the head & tail and cleaning the cavity out? I always loved smoked mackerel but never smoked any myself.  Usually just broil with some wine & butter sauce & flaked almonds. Your note about...

    Pink Salmon

Pink is pretty cheap at wallys. @4$ a lb. I smoke it sometimes. I found the skinless filets take very little brine time. Very good. They sometimes have it skin on too. The salmon run is pretty sparse here in fl. :o) Greg

Hot Smoked Salmon temp & time??

What species of salmon is that (farm raised)? I've been getting some pink (wild) at Walmart.  Not bad, but not my favorite.  The salmon  run here in FL has been pretty sparse the last few years.. Must be that global warming ... Not sure I'd associate with anyone who dislikes salmon

    Smoked Salmon Constructive Criticism

I used to line the drip pan, but now just get the disposable foil pans for under a buck that work great. I use a 9x13x2 in my mes30. Greg

I have a old folding lc smoker that I converted to propane canister. Used to pack in my baggage to Alaska and smoke the salmon right by the creek. Made some great stuff with that smoker. Greg

    Freshwater Fish

I too grew up on catfish, bass etc. With some saltwater trout and a few others. In florida. I love wild caught cats. But don't care for farm raised. The taste and especially the texture don't compare. I don't even like pond raised that are fed pellets. My favorite FW fish are walleye, crappie...

isn't the species of salmon important?

I totally agree on farm raised. If I can't get wild, I get something else. Fish, shrimp etc. fortunately I haven't had any problem finding wild. I also catch a lot of my eating fish. But salmon are pretty scarce in the gulf 128522 Greg

isn't the species of salmon important?

I'm a little jealous of those who live in ak and get good fresh salmon. But living in n fl has a few perks also. Been waiting a half century for the gulf salmon run :). I had some chum last Summer labeled as "silverbrite". It was good grilled everyone raved about it. Who'd have thought. I get...

    White Bass and Stripers

Thanks Leah, I'm sure that rabbit stew will be special.  I'm putting a duck on for the feast in the AM.  Thanks so much for your help and your kind words about the website!  Duck  bacon is a new one on me. I've made duck jerky though. Greg

    White Bass and Stripers

Thanks Leah,  I don't think my smoker will get that hot, but I can smoke it a few minutes then throw it on the grill.  Happy Thanksgiving to you as well!  My wife & I fish & hunt a lot and are always looking for new ways to prepare our catch.  I appreciate all your pics of the trimmings too. If...
