    coffee rub?

Thanks for the recipe - I think I'm going to have to give this a try this weekend...don't know what I'm going to smoke, but I've been looking for a coffee rub to try.

    smoked jalapenos

If you've got an AMNPS (or other Amazen product), smoke generation for such an extended period should not be a problem.  Smoke from the MES smoke box probably won't happen.

    smoked jalapenos

I've smoked them a few times - for different plans.  My first idea was to make some smoked jalapenos to replace the pickled jalapenos that I could use in recipes (such as meatloaf, salsa,, on top of nachos, etc.).  For these, I smoked at about 180* for 2-3 hours, depending on how soft I wanted...

    Finally...First Brisket

That "foil contraption" is my smoker!!!  Ha!  j/k It's a Smokin'-It #3D, check it out...there is foil on the bottom surface of the cooking chamber, a foil tin for some water, and the long house-looking thing with foil on top is the smokebox (I put foil on the "roof" so that I can easily remove...

    Finally...First Brisket

The flat hit 200* at 11:30 (10 hours) - I wanted to take it to 205, but my wife was complaining about how hungry she was for a midnight snack for the last hour...so I pulled it out and cut off a couple slices for her: My wife really liked it (and so did I)!  I thought it was good for a...

    Finally...First Brisket

Put it in at 1:30 (PM) - it's not 9PM, and it's up to 172*.  Still expecting it to be awhile, but it's been caught in the stall for a few hours now.

    Finally...First Brisket

I finally made the leap...picked up a 10.3# brisket at Costco the other day, so I figured I'd give it a go and see how it turns out.  I haven't had much brisket before (I'm more of a pork person), but I'm really looking forward to some good meat...I hope.  Here's a few pics pre/post-trimming (I...

    MES40 Re-wire Project

You wouldn't happen to have a photo of which one is the factory safety thermostat, do ya?  Or a description on what I'm looking for? TIA

It's a Gen1 with the controller on the top against the back edge of the unit.

    Brisket

If I'm only smoking the whole thing until the flat is done (and then making burnt ends with the point), what is the ideal temp to take the flat to?

    MES40 Re-wire Project

Well, here I go on a complete re-wiring project for an MES40 that the leads to the heating element burned up.  Thanks to TromaRon (who graciously parted with the used smoker for free).  I'm hoping to include a bunch of step-by-step pics to help anyone else looking to do the same thing for...
