I put flat bar inside and out to help seal a little better. And it makes it look finished inside and out.
But, Jabbo's right about limited access to the innards of your smoker being restricted by the flat bar. You have to judge if you opening is that restricted.

3/8" plate, though it works well, would make it much heavier than necessary. 1/4" wall is pretty standard. That's why a lot of us build them out of propane tanks, and price If you can find an old one. Try craigslist. Also I think the domed ends look cool.
