We caught salmon last Friday and you know how it taste better fresh so we smoked 2 20 pounders on Saturday.
My step son has an awesome recipe and it was melt in your mouth salmon.
Hephaestus I like you're idea!
Oh yeah I built one similar.
I'll share some of my smoking experience.
Been out of the country for the last couple of weeks but I can see you do need some positive response.
Yesterday I smoked 19 turkeys all at once on my center fired. Turned out to be over the...
Most good ideas are worked out, not thought up finished like Mozart would do. Would you be thinking about an internal flue type valve? The beauty of it is it doesn't have to fit real well because you would never close it off anyway. It would just give you some control. Or maybe a slider from the...
Nice job with good ideas SmokeJumper.
I have to add that a long time ago I thought about having a window into the cook chamber. You would need a square smoker like yours and mine turned out to be round.
Still I think it would be worth the effort to put your double pane windows for looking at...
You did a good job on the counter weights. As far as looking like a professional build it's better. A shop would never put that much work in the details. Can't wait to see what the finished product looks like. Good job.

BigBoy you could try my method. Check it out on my build. If you have any questions let me know. I laid them out differently but they're very similar to rasimmo and they look cool when open.
Luck

This design will have a temperature differential from side to side including the middle. That being said I smoked 16 turkeys from 11 lbs. to 21 lbs. and by putting smaller birds at cooler areas and larger in the middle they all finished at the same time! Just 1 plus with this style of smoker. I...
I like one door, but with a tank like yours Ribwizzard's got a good point. With the massive amount of steel your smoker will recover the heat fairly quickly even with one big door. The clamps on the door are toggle clamps. Hardware venders sell them but look on eBay and you can get them more...
Looks like you're progressing quickly. I used toggle clamps to hold my door firmly closed. They were expensive from the hardware store, but then I found the same on eBay for much less. I bought the cheaper ones for my next build. The clamps come in different sizes and I used 500lb.
As far as...
Just a thought. If you start with the door in the complete open position you'll see where to tack the counter weight arms, (closest to hinge area), on the door and all the clearance problems will be obvious. Where to locate counter weights and miss anything that could be in the way. This also...
I wanted to ask if you were going to have granite top food prep areas. That would look awesome. My wife wanted that for mine but the price was prohibitive.
