    I would add that, as a concern, having a well sealed firebox is far more important than having a sealed cook chamber. The firebox sealing determines your air and fire control while the cook chamber sealing satisfies your OCD.

    Any artificial sweetener with maltodextrin in it is said to raise blood sugar. This includes Equal, which my diabetic mother used for years, and the doctor kept after her because of her A1C levels. Yet the doc's and dieticians kept saying Equal is fine for diabetics.:emoji_angry:

    I used to cook at 250 on my old offset 'cause it ran so well there. Then I discovered briskets cooked so much faster and tasted as good or better at 325. Only thing is you might have to take it to a bit higher finishing temp to get probe tender. I had 'em go up near 210 with a high temp cook.
