    Thanks Inkbird. Smoke Hollow gasser smoker and Huntington grill and old Brinkman charcoal smoker I use occasionally for cold smoking.

    Just the Wife and one son for Christmas dinner this year. Smoked standing rib roast, baked tator with smoked cheddar, asparagus, bourbon glazed mushrooms, and some crusty bread. The other 2 came over yesterday for home made pizza. They wished they came Christmas. LOL

    Nice recipe, We have been doing these with a very similar recipe for Thanksgiving for couple of years. Wife adds some chives. Saves making then on thanksgiving day, allowing more time to visit. This year we made 2 days ahead of time with a whole 5 pound bag of potatoes.

    I usually rest for minimum 2 weeks. Longer is better but that's hard to do.

    Needed to restock for the winter. Couple of cheddars and pepper jack and Colby. About 5 hours with Amazen Tube filled with cherry and apple.

    I do these all the time to fill up the smoker. Makes no sense having empty racks in the smoker. Better than deli lunch meat anytime.

    Yes venison does work. Some friends of mine do use venison in theirs. I am not an expert but I think you need the natural for it to dry properly.
