anything you can smoke over charcoal you can smoke in the MES. Just remember that the MES does not get hot enough to crisp up the skin on chicken. you will need to have a secondary method to crisp it.

If i had a skinless breast i would brine it and then lay some bacon slices over the breast to keep it from drying out while smoking.

Your friend has a towable that probably uses wood splits for heat and smoke.

I believe that the cajun injector smoker is just like the masterbuilt electric smoker .
If so the unit will not achieve high enough temps to crisp the skin on the wings.
You will either need to put them on a hot grill or in the oven under a broiler or my favorite.
