I will cook it "whole" but if I am in a hurry I will spit the tip to help speed up the cook a little plus I do like to be able to season it on both sides.
I use the PB pellets and get a better taste and smoke from them. I have tried the others but always go back to PB pellets. I also get a smoke ring from the All Natural Competition blend
What you add or rub on your brisket is up to you. But I do suggest you make a note of what you rub on it, So if you do like the way it turned out you can repeat what you did.
Also depends on your smoker. My smoker I use 3 chunks no more or my temp goes up and the smoke is not Blue thin smoke. My buddies old cheap Walmart smoker he uses 5 chunks some times six but there again because of heat and smoke. My other buddy uses only woods chips but he has a top of the line...
