A good brine mixture and mop for chicken?

Can anyone advise on approximatly how often to mop the chicken? Last time I smoked then I did this every hour and the skin was somewhat rubbery like a rotisserie chicken would be. Thanks!

    Brinkmann Smoke 'N Pit Firebox

I've been looking into a coal basket for this model and I was wondering if anyone has one and if so what are the demnsions? I haven't had much luck finding a place to make one and I'm not handy with metal so I decided to explore on-line. I found a couple made by Horizon but I'm not sure which...

A good brine mixture and mop for chicken?

That sounds incredible, thanks!! Does the spritz take the place of the mopping? Also, with the brining is that all cold water? I have read some that say you should boil half the water. Thanks again!

I'm giving my first go round with smoking a chicken tomorrow and I was looking for a good brine mixture and curious what some use as a mop, or even if you do for that matter. I'm completely new to brining and I was planning on adding the Kosher salt and sugar but I wasnt sure what else (if...

I'm going to take this approach and see how it works out! I was just a bit nervous about putting out the money, having it not work, then failing on the mod. The instructions seem very simple though and I think it's something I can do if the thermomter becomes a problem. Thanks for all the...

Sorry if this is something that's been posted many times but I couldn't find anything that was what I needed in other threads. I'm new to the board and to smoking and I had a couple questions I was wondering if some could help with. Right now I'm using the Brinkman Smoke 'N Pit with the side...
