The TP-20 is a good reliable thermo. Been using it over a yr, And a couple guys I work with here have picked them up. They are easy to use and good product.

I use a pitboss pellet pooper as our main grill/smoker. Being as we can smoke sear and grill on it it works great for us. I break out the weber when I am at home and have the luxury of time to use it. I would love to go with an offset but living where I do, getting a good wood for it is not easy...

Hello and welcome, I would stick to the basics of Salt ( Coarse ) Coarse ground black pepper, onion powder and garlic powder, or just salt and pepper for a rub. Your pics look great the way they are. Smoke / cook the way you are and see what you think.
For a few different ideas other than PP and sausage which are great uses. Cube some of it up to make Souvlaki, Use some as ground for different recipes like meat balls ( spicy) mix with other meats to do hand rolled sausage like Mititei, (Romanian Great stuff ), Braised or Al Pastor, Cuban...
We usually save our deer for sausage and jerky. We use it as well as our moose or elk for burger and we add 10% beef fat to the mix. It fries up great not to dry with no excess grease / moisture in the bottom of the pan. It makes great burgers as well. Like on the venison burgers.
Thx for the like kelbro I am a fan of them in a stew or some latin dishes that are similar, But otherwise I usually steer clear of them. The wife tortures me a few times of yr and cooks them up. I just can't get the like for them that way.
