    I see no problem with a stainless board, I don't saw through meat so much as I drag a very sharp edge through it, same way with veggys, knife stays sharp for a lot longer. I bought a glass cutting board 1 time, it got changed to a hot pot holder PDQ.

    When you load your smoker you will find the temps drop due to the meat being a heat sink, it may turn out to be a lot closer than you think. They may or may not trend higher when the meat gets close to target temp, for myself I would do a few cooks and see how it goes.

    Did you put the therm probe next to the units sensor? if you didn't it would be a 50/50 chance of correctly fixing it. Also it might take 30 minutes or more to stabilize. They also swing the temps to make smoke so 25 each way is common.

    He popped about a 1 1/4" hole through the block wall. He stated some of the folks running them ran the exhaust through a radiator to scavenge more heat , not sure I would go through all that but it's cheap enough to run some tests with it.
