Down here a lot of people put up a chicken wire fence around the garden and then drape a fine mesh cloth over it supported by poles in the center where you can walk around under it.
We always roasted ours in an oven on a cookie sheet, down here you can get
them right out of the field.

If your deer has been hunted right and cleaned right you won't have any problems, if you run it with dogs or drives you will never get the wild taste out of it because there's to much adrenalin in the muscles.
