    New to offset smokers! A few questions I need help with. Any help would be appreciated.

    Did you remove the football shaped plate between the firebox and the smoke chamber? I would drill a hole to drain the grease. I'm surprised there is not a provision for that already. Do you leave the exhaust wide open and adjust airflow at the intake?

    Sounds awesome guys. I got 2 racks of baby backs, pork tenderloins, 2 butts, smoked sausage for pork shotz. Going to have fruit salad and ABTs. So far.

    Help getting a nice Crispy Crust on a spatchcock chicken. Cook advice

    What works pretty good to is to lightly sprinkle baking powder on the skin before smoking.
