    soldering iron and cold smoking

For mine I bought a low wattage one from harborfreight (orange handle , maybe 30 watts ? ) drilled a hole in a cleaned out soup can on the side near the bottom about the same size of the barrel of the soldering iron . Then I took out the screw that holds the tip of the iron , put the iron...

    Cleaning the A-Maze-N smoke generator

Their website says made out of 304 stainless steel - will not rust . I just ordered one but the guy said he was out of town and would send it out later this week . I don't mind throwing chips in my MES every half hour or so , but at the lower temps (say 225 and under ) I have the problem of the...

30' MES and black, charred chips

I drilled 4 holes in my loader tube about 1/2 inch and drilled out one of the existing holes in the end of the loader to 1/2 inch . It seemed to help slightly . One problem was my MES is in the garage and there was pretty much no breeze whatsoever . Normally there is some air circulating thru...

30' MES and black, charred chips

we had this on the old forum . Mine does the same thing and I had said I think it's lack of air . I was going to drill some holes in the bottom of my chip loader tube thinking that would allow more air flow to the chips . I went to do it and the battery was dead on my drill and I never got...

MES Electric Smoker Cooking Too Fast???

I've only done 2 or maybe 3 . I did whole packers , trimmed some of the fat and seperated them each time . they were pretty close to the same size and the first one was in there for about 20 hours . I think I was going at 225 . It turned out very good so when I did my next one I did it the same...

    brownulated light brown sugar

if somebody knows what I did wrong let me know please . I copied the html code and pasted it in my post and then a box popped up that said I had to ctrl + v in the box to paste it there but it was the code that showed up in the post not the actual photo . If I click on the code it brings up the...

    brownulated light brown sugar

I have been meaning to post about this stuff for quite some time now . It is brownulated light brown sugar . They are like tiny little beads . I like to use it when I make up a batch of rub because they don't ball up to themselves as time goes by using the rub every now and then . Maybe this...

    Ronnie James Dio passes away

I realize that this isn't smoking related , but if you haven't heard yet , Ronnie James Dio passed away Sunday morning . He had been battling stomach cancer . He was arguably one of the best vocalists in hard rock for right around 40 + years . I know some of us here are into that type of music .

    MES water retention

Normally mine only gets a very small amount of anything in it , but the other day I happened to notice it was overflowing , mostly with water . I just figured I bumped mine when the water pan was really full . I usually have whatever I'm smoking over the water pan so most of the meat juices fall...

Anyone have MES jerky suggestions? My plan, and a few questions.

I would say get some hi mountain jerky seasonings and use that . I used to make up my own spice mixtures but a few years ago I tried the hi mountain stuff and I've used it ever since . Most of the time I start it in my MES at 200 for about an hour (it seems like it takes about 30 minutes or so...

    Another SourDough ???

my advice would be to try to obtain some starter and start your batch with that . I only say it because I tried to start some about 10 times and it never worked . I tried different flours and my well water and then spring water and nothing worked for me . I finally just ordered a starter from...

    How Many Mes Owners Here?

I like my 30" . I ordered one from Cabelas and got the tracking and it said it had shipped so I went and bought a pork butt or something and I never got the smoker , ups said it got put on a truck to California , but I already had meat to smoke , so I made about a 2 hour drive to Cabelas to get...

    smoking jalapeno's

when I did mine I halved them and left the seeds in , some things I have read say take the seeds out , I smoked them at 225 with the door to my MES barely open probably for about an hour or so and then I finished drying them in a tabletop convection oven that I use for making jerky . They...

Question for you guys with smokers on your decks

At my local Menards they have a pretty good size "pan" that is made for putting underneath your grill , smoker etc. , on clearance for about $5 . It is with all the grill stuff . Maybe your local store would have the same thing . It's probably about 2 1/2 feet by 3 1/2 feet .

First Turkey on the New MES

Look's great ! I've got some questions for you : which MES do you have ? What temp were you cooking at ? About how long did it take ? Did you notice if your wood chips turned to ash or did they just turn Black ? I guess that's all the questions I've got . I've got the 30 " MES and I've done...

how long to cook turkey brest

Not to be a smart aleck (sp.?) but there are too many variables in your question . Is it a Boneless breast or bone in ? I'm guessing it's a 3 lb boneless ? What are you using for a smoker , etc. Fill us in and someone with the know how ( probably a lot of people with the know how ) can chime in...

Bee-ware your first grilling of the season!

I think that story goes around every year . I thought somewhere there was a link to a story along with photos that bees built a nest inside a singlewide trailer and completely filled it .

    Smaking First Turkey (Breast)?

I think if the amount of salt was high , yes you probably could brine too long , but with 1/2 cup salt to gallon of water I don't know if you could brine that one too long . I know I've brined whole turkeys 24 hours using 2 cups salt to 2 gallons of water and it wasn't at all salty . In case you...

    Smaking First Turkey (Breast)?

I think you could brine it between 4 and 8 hours . That one is lower in salt than most ( I think ) usually it's 1 cup of salt per gallon of water . I won't do any more poultry without brining . for me it doesn't over power it in the flavor dept. but it adds some and also keeps it very moist ...
