Thanks for the tips and post. I love the list of extra goodies you used I think I will try that out if I can find some meat locally. Those peas look great and I grow my own shallots, mint, and rosemary so I just need to run down to the dock for some fresh anchovies and i'm all set!!
I think I...
You can get an injection set from just about any Home Depot, Smart Final or dedicated BBQ store. As far as a packer you can get a full brisket from Smart and Final, or Restaurant Depot in Fountain Valley and some Costco's carry them, but call first.
Do you have a place to put your chips for...
I was watching that adam richmond best sandwich show and noticed they had a sandwich that used pulled lamb from a whole shoulder that was smoked. I didn't even know you can get whole lamb shoulder and was considering maybe trying to smoke one.
Anyone do that yet? I believe it was prepped...
another good "bulk" spice shop is bulkfoods http://www.bulkfoods.com better than atlantic on some, but more on others. The good thing I like about bulk foods is they don't up charge on shipping and you can usually get 5lb increments instead of 5 1lbs.
Had a great time although my pork was undercooked because I just couldn't stay up any longer waiting for it to cook. Thanks again Gary for setting it up. Those smoked nuts and home made chorizo was amazing. I think we need to do at least 2 maybe 3 gatherings next year for sure!!
Had a great time just sitting by the smoker and enjoying a huge selection of various smoked foods like meats, nuts, cheese, cobbler just to name a few. I took tons of pics and will get them online soon.
Can't wait for the next gathering!
Yeah craigslist or ebay is your best bet. I got 4 at the price of $53 ALL NEW, but that was a once in a lifetime deal after HD decided to no longer sell them in stores and put any remaining stock on clearance. I put 3 of them on Craigslist for $220 and they all sold within 6 hours. Several...
They almost NEVER go on sale, but I actually found out that Home Depot where no longer selling the WSM in the stores and any and all remaining stock was put on sale. The out the door price was about $53 for the 18" so of course I picked up 2 at the store close to home put 1 on hold at a store...
Looks great. The old lady also loves lamb so i'll have to try out your rub. Nice touch on the silicon bands never knew they had them I really need to pick up a few as I think trying to tie uni-uni knots with twine may have been overkill..
I think Arlie confirmed 75 teams which may have been the max since they ran out of space. It's going to the the biggest event in CA history!! Might stop by the for the pot luck.
Well I went with an online standard meat chart and cooked it to 150 IT. I seared it under the IR burner in the oven at around 550 with a little olive oil. Gave it a nice cripsy texture then I applied wet/dry rub of fresh basil, rosemary, onion, garlic and a few other items. Basically I just...
I used to do mine like that, but realized the ends usually end up dry by the time the center section is done so I just trim and cook adobo with the trimmings.
Nice looking pics, FYI if you trim your ribs and get a stacker you can fit up to 18 racks on the WSM at once!! Light about 25 coals and use a 1 and a half load of charcoal from the chimney and your set!!
Looks pretty good. I have a 7 "tier" composter and I put food in the top that encourages worms to continually crawl up and after a few days I remove the bottom and harvest the compost for worm tea and top dressing on plants etc. How do you use that one? Do you just turn it to airate the bin?
That char broiler is joke. Metal too think and it's too drafty to do any type of overnight smoking at all. My buddy got one and it wouldn't hold temps for more than 30 min. They work ok as a "grill", but if you want a grill your better off getting a Weber kettle anyway.
Not sure why your...
I don't have time to smoke it so i'm going to put it on the weber grill and do a quick cook. Hoping to get it to 135 in about an hour or an hour and a half and let it rest for about 30 min if possible. I have both coals and cowboy lump. I'm going to try and give it a quick sear in a SS pan...
