    She leaves the very next morning to return home to LA. I just smoked a brisket last week for practice and had brisket for 4 meals. I don't need any more brisket, and personally it's not my favorite. I will probably do both but trim the points to make both the same size and more manageable.

    I had a similar idea, I need more flat than point for the party, I was thinking of cutting off some point from each of them and freezing them. This makes the size of each more manageable. I only need enough points to pull for some Mac and cheese.

    The thickest part of the flat. Yes, it was and everyone who has tasted it so far has said the smoke was great. That's part of the problem. If the smoke flavor is because of smoking for 9hrs at 180, then if I change too much, the smoke flavor will be less.

    4.5 lb NY strip roast

    I have smoked several of these. My wife likes her meat more done then everyone else, she gets the outside sides and we get the middle. The roast allows it to be in the smoke longer for more smoke flavor.

    The brisket was prime from Costco. I trimmed the non fat side some, I trimmed the fat side none. There was only about 1/2 inch of fat on the fat side. I smoked it with the fat side up. I did not inject it, have never tried it. And the spices were just pepper and granulated garlic.
