Smoking Serranos, Thai & Habanero Peppers

Went to the Farner's market and scored some nice hot peppers.   In the smoker to add some good flavor and to dry them out.  I'll grind them in the food processor first, then grind them finer in the little coffee grinder.  Nothing better to add on......... almost everything

    Hickory Smoke Infused Bourbon

I probably wouldn't use real good hootch either  -hence the article: This process amps up the smoky notes of bourbon, infusing a pleasant grilled flavor. You’ll want to use middle-shelf bourbon here, like Jim or Jack.

    Hickory Smoke Infused Bourbon

I am really starting to believe that anything can be smoked in some form or another.  I saw this recipe and wanted to share.   Looks mighty tasty.  The Hickory Infused Bourbon caught my eye.  Here is the page: Grilling with cocktails is a backyard tradition that I look forward to each year...

Trying my hand at some unstuffed smoked beef sticks w/ Q-View

Just finished the first batch.  A lot more grease than expected - they shrunk up pretty good, I'm thinking that the "80/20" that they sold me was not that.   Needed to keep the door propped open to maintain 150-160.  Used (2) chip pans of hickory and finished it off with a pan of Cherry. Took...

    1st time Salmon Jerky w/ Q-View

Hi Wes, I did a lot of sampling (the best part) after the initial 2 hours of smoke. It was the only way that I could see if it was done    I do a lot of beef jerky - so I figured based on the thickness (approx 3/16-1/4") that 2 hours was a good time to start taste-testing.  The amount of oil in...

Trying my hand at some unstuffed smoked beef sticks w/ Q-View

The liquor store had a sale on beer - so I decided to make some beef sticks.  I don't have a grinder or a stuffer, but I saw Bear's recent post http://www.smokingmeatforums.com/t/95395/unstuffed-smoked-beef-pepperoni-sticks-with-qview So I thought that I would give it a try because he knows his...

    1st time Salmon Jerky w/ Q-View

Almost all gone Bear..... I tend to give a lot of my jerky (beef) away to family, friends and neighbors because they are all "smokerless" and I want them to experience the finer things in life. I learn a little bit more evrytime I smoke and jump on this site!  In fact my older sister just...

    1st time Salmon Jerky w/ Q-View

I saw that some people rinse the meat when they take it out of the marinade.  I just wiped it dry.  But - I am really thinking that I also brined it way too long - I think 4-6 hours is enough (like Bearcarvers smoked salmon recipe).  He has not steered me wrong yet.  I'll make the changes next...
