Got a few Venison steaks/chops leftover in the freezer from last years harvest. Going to rub them up with Jeff's dry rub and throw them on the smoker this weekend. I like my beef on the med rare side so I'm thinking an internal temp in the 130-140 range? How long can I expect it to take to get...
Went to the meat market today to buy a pork butt/shoulder to smoke for pulled pork on Sunday. Was surprised at the size of the thing. It's 11 lbs! At 1-1/2 hours per pound it'll take about 16 hours to cook it in the smoker. Does this sound right?
Last week I completed some basic mods to an ECB smoker. Today I did my first smoke. St.Louis style spare ribs using the 3-2-1 method. Very pleased with how it went. For the most part I was able to maintain temps in 225-250 range. Ribs have good flavor. The rub is much saltier than I prefer but...

Completed my initial mods to the ECB that was sitting brand new in the box in my Dad's basement for the past 15 years.
Heavy duty "L" brackets used for legs mounted on outside.
Thermometer added.
Existing hole for the heat indicator that came with unit converted into exhaust. Tuna Fish...
The legs that came with my smoker are designed to be mounted inside the unit and have a "notch" for the body to rest on.
If I try to mount them on the outside, the unit cannot rest on the notch. Will the legs support the unit if the unit is not resting on the notches?
I'm thinking maybe...
