Thanks for the ideas subvet. Using a laser level to layout the cut out lines is a great idea I hadn't thought of. I'm still kicking around some ideas and it's good to think it through before the plasma hits the metal. A warming box is definitely in the mix as of now.
Been there done that! I had to reposition and weld my fire box door 3 times before it was right. Third time's a charm. And Murphy's law says you'll run out of something when you have to have it.
But you'll be cooking on it soon. It just seems like a long time because you're ready now.
The diamond plate will work just as good. For your fire box the welding and functionality would be the same. If you need a smooth surface for any reason just face the diamonds away.
