1/4" for the fire box is fine and 1/8" for the smoker will give you years of happy smoking. And the size is the best quality of your smoker. You can smoke anything in that monster!
My firebox is offset from center and works just fine. I didn't anticipate a warming chamber on mine and in the end...

I with you gary s, except burning out the inside with the weed burner. Sounds like a good idea that I might try. After 3 or 4 smokes I remove the grates to scrape the reverse flow plate. It gets really burned on grime. I found that a thick build up on the RF plate will insulate the smoke chamber...
Aluminum has high thermal conductivity which means the heat radiates well from it. I suppose you could build it from the aluminum tank but the welding and cutting - no oxy torch - would be different from steel and stainless. Also because of the thermal radiation you would probably want to either...
I have a bucket of olive oil and the day after a smoke I paint the inside with it. everytime. It's not that big a deal and it slows the rust. Also it does not add any contaminates to the smoke chamber.
That is one nice trailer set up you have there but it's the propane tank that's really going to set her off. Betcha we won't even recognize her when you get her done.
