Wouldn't 2 plus days in a brine be somewhat to much for the bird ..? I know I've personaly over brined chickens and they ended up mushy and a bit off tasting..
Is there a method I'm not aware of ?
Been around the same price for choice at our local krogers however, they have looked like crap ! Good for just a cheap Sunday brisket though. These i definitely go slow and low on due such poor quality .
Pork butts have been plentiful . Haven't seen any porkbellies with any size to them all...
Thanks Dcecil !
Here's a picture of my 2nd go around with brisket on the new rig..This time instead of slow n low 225 temp for 3/4s of a day/night , I decided to cook at a little higher temp to shorten time . I've read about it from forums and people's opinions who done it before. I know...

I can understand those busy days , and being able to set the temp and walk away from it until it's finished !
However , I can't do that with my new smoker i recieved for fathers day !
The smoker has wheels but it's super...

I usualy stay away from eletric smokers only because I am a old school type of cook and enjoy thr whole process of loading with wood/lump coals ..Then watching the temps ..The whole process just seems more satisfying to me once the cook is finished...

Stay away from Dnya Glo smokers.
My opinion as I've own one before.
It'll last you 3 to 4 years if covered from element's. However , the high temp paint on the unit will bubble. The fire box door is a constant work to keep closed properly. Which i had to make modifications .
The smoke stack is...
Thanks ! So far it's not a bad backyard smoker . The welds are solid but the firebox door and the lid needs some high heat sealant to get a full airless fit. Holds temp good buy uses alot of fuel to keep it going on long cooks. Cooking my 2nd brisket on it today ..
Cheers , Greg
Thanks Al , I'm Still trying to work out all the kinks on the smoker..first go around wasn't to bad but i couldn't just load and go ! I had to babysit it and really watch the temps . Twards the end of the brisket the smoker ran hot real fast and got me.. One minute I'm good..next thing i know i...
