Thank you for all the input. I just rolled with it and it turned out fine. Wrapped the pork butt in foil and finished it in the oven though I know some frown on that. I think I just need some practice. Cooking time was a lot longer with the offset even though I maintained a decent temperature...
So I'm brand new to smoking with a firebox. I've noticed flying ash particles making their way to the cooking area. Is this normal? Will it hurt the meat? Any help would be greatly appreciated.
