    Who remembers these?

We used to get Shiner Bock beer balls all the time, great taste, much better than out of a bottle. Kept it in the fridge for a week unless we had friends over... I used to work on the Shiner distributor's beer trucks here in Austin in the early 80's and would trade beer for repairs from time to...

    Pickle Brined Chicken Thighs

I must have done it wrong, mine tasted like pickles way too much.

    fire box position

If you are building a smoker and not an oven then the heat source has to be as far away from the meat as is possible, no? I say this because many offset smoker pilots spend time balancing/managing fire size to produce max clean smoke without exposing the meat to higher heat than what is wanted.

    Slot Grill?

I don't even begin to need another grill BUT anything BBQ related that's legit and UNDER $100 is heading home with me. I'm surfing a second higher rack for my intro level pellet spitter and some sellers are asking half what I paid the the cooker in the first place, NOT cool! This guy gets an...

I watched his YouTube video, it looks totally legit. Nice thick steel. I like the break down feature too.

    velveting jerky meat

Can't say about jerky but I don't like the taste of beef after treating. It's a subtle change but I can taste something a bit off. I guess strong flavors like the chineese use mask it because I like stir fry beef I get served at resturants and that meat has to have been velveted.

    Any takes on Rosemary seasoning?

I didn’t know I liked sage or fennel until we tried a sweet Italian sausage, fennel and sage lasagna. Simply outstanding.

    Misunderstandings

I’m lucky as my wife hates them so whenever I smoke brisket they are ALL mine !

    Misunderstandings

Your initial impression is correct, they are exterior portions of brisket that have been smoked more than the interior portions and they are wonderful. I've not been impressed with fake ones or rather those created on purpose to grab attention. Real ones are in limited supply and therefore...

    Jalapeno oddities?

I'm familiar with Pepper Joe, but I hate to pay shipping for a single pack of seeds. It's seems strange that here in Texas, hot jalapenos are hard to find. I've been using serrano for a few years now to get some good heat that won't melt my face but I still love jalapeno flavor.

    Jalapeno oddities?

The words "Chef Jeff's super hot variety" make my ears perk right up! Are they really hotter than the weak tea peppers sold at stores these days? If so, I'm buying some ASAP. Oops, they are not sold in Texas it seems, dang it!

    Jalapeno oddities?

I’ll save the seeds for next year just out of curiosity. Last year I left a single pepper on a dead plant ( not knowing about wintering at the time) and it dried to an ugly husk before I got the idea n the spring to try sprouting the seeds. Better than 99% of the seeds were viable, to my great...

    Jalapeno oddities?

I've got what turns out to be a green pepper plant about 5 feet away, a serrano about the same distance and several store bought jalapenos a little further out. The green pepper was sold as a jalapeno. I'm interested it the yellow pepper flavor myself. If they are hot, I'll save the seeds and...

    Jalapeno oddities?

I've got two Jalapeno plants that are producing yellow peppers. These plants came from the same pepper that the other 14 plants came from. I know, I grew the plant that the pepper came from and I handled each and every seed my self, so no way the garden center mixed these up. My internet (AI)...

    Pickled smoked brisket?

I was snacking on some fairly dry smoked brisket flat slices out of the fridge yesterday and munching on some spicy picked okra at the same time. The combo was great, I ran out of the okra but still had some of the pickled okra liquid left over so I tried dipping the brisket slices in the...

    My Bluegill Order

Best tasting fish ever...in my heyday I could eat a dozen of them, straight out of the water and into the grease, with a short stop in the corn meal!
Great deal on LEM Grinders!
