Ruined a couple steaks. With crime scene photos, er...Q-view

The wife brought home a couple steaks. 2" thick Porterhouses. Figured since it's a holiday weekend, I'd reverse sear them on the Mini. The poor unsuspecting victims. We'd planned to do them Sunday but the weather was uncooperative. I'd already salted them, so I just put them back in the...

Newbie just can't get it right

First off, welcome aboard! Next, take a step back and relax. You can do this. It just takes a little time and patience. You just got a little ahead of yourself. Starting off with brisket was maybe a little bit ambitious. Ribs have their own set of disasters in waiting. Let's start with...

    PartyQ on the mini.

I have to brag on this little gadget again.  Hadn't used the PartyQ in a while, so yesterday decided to do some chicken. Set it at 275° and the chicken hit 165° in about 2 hours. We weren't ready to eat yet, and they were thighs which would be fine going a little higher in temp anyway, so I...

    Impromptu spatchcock smoking.

From the looks of things, the probe sensor may have been barely submerged in the meat. Not sure which thermo you're using, but on the mavericks, the actual sensor is maybe 2 thirds of an inch back from the tip. So it looks like you were getting a reading pretty close to the surface.

    Pork shoulder vs Pork Butt

Thanks Joe! It's really a case of convenience. Around here a trip of more than a mile any time between 7 am and 7pm is a frustrating task due to traffic, so I avoid it and stick to the neighborhood.

Bacon: How to COOK it (not how to make it)

This really works. It takes a while, but the water renders more fat than frying alone, and the resulting bacon cooks up more uniformly and crispy than any other method I've tried. In addition, you end up with more fat in the pan, so if you're rendering bacon to sauté something in the fat, this...

    Pork shoulder vs Pork Butt

My local grocery store has stopped selling butts as well. All they have now is the lower picnic portion (sort of ham shaped). It's ok, but as JJ pointed out it's a lot more waste between the bones, fat and skin. Also a lot more prep time. And this may be just me being mad at not being able to...

SMOKED MEATLOAF w/ my new FIREBOARD REMOTE THERMOMETER

Al, you've disappointed me. I thought you were one of the folks I could trust. One who would do the right thing over and above self promotion and grandstanding. But here you are, if front of God and everybody, smoking a meatloaf without a bacon wrap. For shame!! I kid. The meatloaf looks...
