    London broil and brats

The trick is to leave them long enough in decent amount of smoke while warming.  I never go over 2 hours before getting them to 165*.  I take mine straight from the fridge to smoker. (the outside is already dry enough)  This gives me time to add smoke and warm them up before grilling and still...

    London broil and brats

I've been doing brats in the smoker the same time as I do reverse seared steaks.  I smoke them about 1 & 1/2 to 2 hours between 170* to 200*.  Then I do final sear, same as I do the steaks.  In the firebox on a grill placed over a fresh hot load of coals.  Brats never split the skin, and I still...

So what's the big deal with peeling the membrane off ribs?? does it make a difference??

Sometimes it's difficult to tell if the membrane is actually left on a rack of ribs.  When the tough membrane is removed there is still a lighter, though, more tender membrane left on.  If you aren't familiar with the difference, it can confuse you.  I've done both.  Removing, and not removing...

    Do mods help? Really?

Yeah, doing all those mods would take me about 10 years too.  LOL I'm not sayin' all mods are worthless, but just not to stress over them.  You can still turn out good smokes with finessing things around.  Will I never do another mod on my CG?  Come on now... we all know the answer to that...

1st smoke of the year.... Man am I late!

Ribs turn out great. Morel season didn't.  LOL I didn't even bother going out this year, they were so sparse.

    Do mods help? Really?

We all like to do the mods.  They are fun, and we think we making our CG fool proof.  I'm as guilty as most are. But I think for the most part we just fooling ourselves.  I've tried a lot of things.  Side to side temp regulation for starters.  Every time I think I have it nailed down, on the...

    July 4th - Packer Brisket

Somehow I missed seeing this post.  Nothing new for me to miss a post or 20.  Nice smoke ring on your brisket there and those burnt ends look good too. Yeah, 300* is quite high to cook a brisket.  I know "low & slow" is used a lot in describing good BBQ, but I've got to believe Briskets was...

First smoke on Double Play offset

Looks good enough to eat to me!  Congrats on your 1st smoke in it. The water pan may be the reason for cooler near firebox side.  Could also be your tuning plates.  I'm just guessing, as I don't have that model of CG.  I have the smoking Pro model, and don't use water at all anymore.  But...

    Insulating a Char-Griller??

Try and get those welding blankets that vdoss and I have.  You won't be sorry. Rather than ordering online, try and find a welding shop who may order them cheaper for you.  That's what vdoss did.

1st smoke of the year - 06-14-2016. Yeah, I'm late.

There nothing wrong with the enhanced ones.  They cook a little quicker, easy to get tender.  And they already contain enough salt, so don't use a rub with salt in it.

1st smoke of the year - 06-14-2016. Yeah, I'm late.

Ribs were "all natural" meaning not enhanced with salt or tenderized before packaging.  It was just one slab of St. Louis Style.  I cut it in half for ease of placement.  The roasts were chuck eyes.  Ran smoker between 225* to 240* the whole time (about 7-8 hours total)
