    Every year just before Christmas you can find rib roasts on sale at a good price as compared to regular price. Last few years we've paid 5.99-6.99 lb. We buy a bunch and have them cut it into steaks if they don't charge for it if they do then I cut them when I get home. We then vacuum seal them...

    I personally would think about electric something like an oven burner and a PID controller. Use an Amazen smoker or something like it for smoke production. Being where you are I would insulate it.

    When you got home a trip to the hospital ER you want to go to more than likely would have you admitted and surgery the next day. The ER in N. FL actually talked to the ER at my local hospital otherwise I would have had to sign out AMA they said.
