Be careful with the carbon steel Dexter knives. They will start rusting before you even take it out the packaging. Pretty crappy. Get the sanisafe series.

Al is your wife a bread guru? I made some challah 2 weeks back (used an Oster bread machine). It was great, but I would like to get it denser (was pretty "airy" if that makes sense).

You should not have rows jumping with all the info you've provided. Im stumped. The only time I had that happen is when the smoker got too hot, or I overfilled. You're doing neither. Very weird.
Chicken breast has like zero fat. Trust me, I know. It came out tasting like cardboard when I used 100% chicken breast. So you will need to mix some fat in. What about 80 chicken 20 fat? I find 90/10 beef too lean, so 80/20 seems like the right sweet spot.
Definitely contaminated. Toss. Make sure you have like 0.25 inches of salt lying on the bottom. That way you know the water has been saturated completely. Use warm water when you start the brine so the salt dissolves easier.

Also, I found 10lb briskets at Wegmans, but they were $5.50 / lb. I assume these are flats too going by the name ("beef brisket first or mid cut").
