My Auber WS fail and how I cured it.

Downtown Syracuse represent! (I actually do all my smoking out in N. Syracuse at my sister's house because I live in a high rise apartment with no outside smoking capability). Cheers!

Looking for Suggestions on a new Electric Smoker....other than a Masterbuilt 40" Bluetooth

You could do what I did and cob an Auber PID controller on the 40. It cost me close to $200 with the additional parts from HD but it works quite well. Keeps temps within 2F and will ignore the max temp that the OEM controller maxes at. In fact it completely bypasses it...

Anyone use the Auber BL-6.5 blower on their WSM? I have questions!

I emailed Auber and asked them about the wild swings, and they replied with the settings for their charcoal PID controller. They told me that they didn't make the WSD-1200GPH for charcoal but that the settings they sent me should work with it. I have 2 tri-tips I'm going to smoke on Sunday so...

Anyone use the Auber BL-6.5 blower on their WSM? I have questions!

damascusmaker: I'll grab the blower and attempt to get a picture of that shutter. It's tiny so I don't know how successful I'll be but I'll give it a shot! I'll get to it later this evening.

Anyone use the Auber BL-6.5 blower on their WSM? I have questions!

Thanks Drewed - I just saw this post (I never got email notification that you posted). Yes, the blower is installed with the shutter correctly oriented. And the all lower vents are closed and the 2 other vent holes in the vent where the blower is installed are closed off with aluminum HVAC tape...

Anyone use the Auber BL-6.5 blower on their WSM? I have questions!

Which damper is that? The damper in the blower is inaccessible and not designed to be manually adjusted. It opens and closes depending on whether the blower is on or off. All the bottom dampers on the WSM are closed and the 2 holes in the damper that the blower is attached to are aluminum taped...

Anyone use the Auber BL-6.5 blower on their WSM? I have questions!

Yes it has a little damper flap inside to completely close off the airflow. What I think is happening is that the blower is moving so much air through the smoker body (the thing looks like a house fire when it's running LOL - OK that's an exaggeration but it moves a lot of air/smoke) and that...

Anyone use the Auber BL-6.5 blower on their WSM? I have questions!

Hi folks. A few months ago I bought the Auber Dual-Probe PID Controller for Bradley Smoker http://www.auberins.com/index.php?main_page=product_info&cPath=8&products_id=380  for my Masterbuilt 40" Electric smoker. This thing works like a charm and through the 3 smokes I've used it for it has kept...

    Pastrami from a corned beef

Ok that was a good read! So the part that I seem to be stumbling on here, is how long would you steam the whole piece of beef? What's your end goal look like (physically)? I'll probably do half of this 5,5 lb flat, so an hour? Two? Do you steam the whole piece and THEN the slices after it's been...

    Pastrami from a corned beef

Thanks Willie. I will check your other thread out. I guess what I hope to achieve here is as close to a "deli counter" pastrami texture/flavor as I can get. Let me see what your other post reveals for me. Thank you again.

    Pastrami from a corned beef

That looks....fantastic! You took it to 160 IT? That's lower than most. It looks EXACTLY like what I want texture-wize though. Most people seem to take them to ~203. Is yours chewy? I want a nice tight slice like yours looks. I have a 5.5 prime brisket I've been curing since end of February...

Please take a look at my bacon process so far

Hey NiceFly, Here is a little thing I put together in imgur. I put the YouTube of the recipe in the last panel. It's the URL for the Test Kitchen's recipe. Note that I cold smoked this bacon. Trust me when I tell you it turned out fantastic! Agreed, you need a scale for your measurements...
