    I went to True Value and bought a rope style stove gasket. Go to Amazon.com and search "rope gasket" and you will see an array of possibilities. "Stove Gasket" on Homedepot.com gets about 12 different results.  Sometimes you will see them as woodstove door gaskets as well.  Hope this helps.

    I would take a small piece and do a test burn and see how it does. Keep the meat handy as thou should never waste TBS!

    I have some peach from my peach tree that I cut a few weeks ago. I've got it hanging up to dry as it is only about 2 inches in diameter and about 4 feet long. It was last winter kill, but I sawed it in half and it was still pretty green even though it was standing dead at least 4 months or longer.

    It could have been cut the day before from standing dead and in that case would be fine. Green wood in a smoker? I'm not convinced on that one.

    The bottom line here is that I would boil test both of those thermometers again, at the same time. If the Brinkmann dial on is as far off as I think it is, try the river country adjustable model. It is only a few bucks more and it's adjustable, so you can't go wrong. I went ahead and ordered...

    I am also planning a smokehouse build. Any chance you would post a pic of the bar you have already built so we can see what the cultured stone looks like? I'm trying to decide on my design and I like that way this sounds. Not sure if it is anything I can incorporate but, we'll see.
