Any issues with using a foil pan in the smoker?

Sam's Club always has full size and half size disposable steam table pans (foil) for dirt cheap. I use them a LOT when smoking all kinds of things, but especially when I do pork butts for pulled pork. I usually turn the butts over about halfway through, and the smoke is nice. But I like...

    Another Tender Eye Round (SV)

That looks fantastic. I'm sitting at the computer, my gut stuffed from dinner, and yet, you're making me hungry again! I've got to try that as well as a lot of the other suggestions in this thread! Thanks!

    Bag of Steak

Here's the thing: It's not really the volume of water that I was worried about. Assuming you have no food in the cooler, and also assuming that your cooler is well-insulated, the heat loss from the top surface of the water will be the only significant "load" the system will experience. The...

    Bag of Steak

I'd probably get more of the bags to start. Our vac sealer protects itself from overheating its heat-sealing element by limiting how quickly you can make one seal after another. This really slows me down when I'm trying to make bags out of the rolls. So short of buying a much higher-end vac...

    Bag of Steak

I like that! I too, like to cut steaks off of full loins or roasts, etc., and I do usually trim them before bagging because I'd rather do all of the "work" at once, and then have a nicer experience when eating. I'm going to study your method and see if I need to modify what I've done in the...

    Bag of Steak

This past Christmas, I bought a couple of huge rib roasts and cut enormous rib eye steaks from them. I then seasoned, vac packed, and froze them. These were really "Flintstones" size steaks. So I had to find something in which to sous vide them. The local Sears store was going out of...

    Sous Vide Egg Bites

I've got to try this. Thanks for the wonderful video and recipe!

    Power washing a smoker

I'd be concerned that a power washer could force water into places where you might not want it to get, causing electrical problems. These smokers are likely designed for gravity dripping and not high pressure spray.

    Concerns on MES 130

That's a good point and a good idea. When I built temperature probes for refrigerators, incubators, and the like for some laboratories, I had a friend machine special aluminum housings for the sensors. These were then anodized blue for corrosion resistance, looks, and to achieve a consistent...

    Bag of Steak

My experience has been that when I vacuum seal with a good vacuum sealer (this may not work for a bag-o-meat that you just immerse to drive out most of the air), the pieces of meat get smashed together so tightly that from a thermal-resistance point of view, it then behaves as a single piece of...

    Power washing a smoker

One thing to keep in mind is that the coating of condensed smoke on the inside of a smoker always "looks" about the same once you have a good coating built up. On the other hand, the bare stainless steel of a new smoker is very reflective. To make things operate consistently, you need to keep...

    Concerns on MES 130

Keep in mind that the temperature probe for the MES (at least my gen 1 MES 40) is located right above the heating element. So it "sees" a higher temperature than a probe placed elsewhere in the box will see. Without a fan to stir the air in the smoker, you will see large differences depending...

    What flavor of todd's pellets

Yeah. I recommend getting an assortment and also a big bag of Pitmaster's Choice. I find it works well for almost anything, so you won't go wrong with it.

Have I killed my Mes 30

Assuming the smoker's original electronics are dead, and you replace the controls with a PID controller, you will also need to obtain and use an alternate smoke generator such as the AMNPS pellet burner "maze". You'll like the flexibility, results, and ease of use better most likely, anyhow. A...

Have I killed my Mes 30

So you may have actually fed 440 Volts to the smoker. The electronics as well as the transformer in the smoker may have been damaged.

Inkbird IRF-2S 40% off while supplies last.

I got mine a few days ago and took it to work. Work? Yep. I have a fancy PID-Controlled thermal block thermometer calibration system that I built a few years back to test and calibrate laboratory thermometers and data acquisition systems. I ran the Inkbird's two probes in that unit from room...

    PID sale?

I just put a nice tenderloin, that I cut, seasoned, vacuum packed, and froze six months ago, into a big pot with a sous vide recirculating heater/controller so my wife and I can have some of the best steak we've ever had later this evening. I realize that's off topic for this thread. But it...

    PID sale?

That really is a good point about the large temperature swings perhaps wrecking sausage and the like due to the overly-high temperatures at the peaks of the swings. The chip-burner system in the MESs really does require that they put the power to the heater long and strong every so often to get...

    PID sale?

Mechanical relays often have a guaranteed life span of 10 million operations or so. And this life can be even lower when they're asked to switch a heavy load. Sounds like a lot until you calculate how quickly that might happen if the relay is being run by a PID control set to a cycle period...

Cannot keep my A-Maze-mn 5X8 lit..

As all of these posts point out: Everyone figures their own ways to get the pellets to burn. I live at about 5300 feet above sea level. So people recommend using a tube rather than the AMNPS at this elevation. But being a die hard, I've made the AMNPS work well for me. Here's what I do...
