    Oh yeah, and that's a good looking bird. I think it's funny that the only melting happened directly under the smoker.  No melting at all to the side.

    With longer cooks, do you move the diffuser up to the next level?  Or is there no diffuser used?  I don't like wasting stuff and if the steamer insert is good for holding the diffuser, then I'd rather use it for that.  But if it blocks air flow due to just having holes instead of being open like...

    Well, I was off work today because of the snow.  I decided to put together the charcoal basket.  Like has been suggested in other build threads, I used those rebar ties to connect the expanded metal to the grate.  I think it turned out pretty well.

    Thanks for the run down.  When I finally get my steamer, I guess I'll have to season the smoker.  I went with the silver since I plan on using it as a grill also, not just a smoker.

    Great build thread.  Great idea about attaching the lid so you only have to cut once.  I imagine it also gives a very clean and professional look to the inside edge. I've got my grill in hand, but I'm having issues locating the tamale steamer in my local area.
