With longer cooks, do you move the diffuser up to the next level? Or is there no diffuser used? I don't like wasting stuff and if the steamer insert is good for holding the diffuser, then I'd rather use it for that. But if it blocks air flow due to just having holes instead of being open like...
So the idea of the bottom rack is to hold the diffuser. Then the steamer ridge holds the lower cooking rack. Is there any reason that the steamer insert couldn't be modified to fit past the ridge? Is there any time when you do not want any sort of diffuser on the bottom?

Well, I was off work today because of the snow. I decided to put together the charcoal basket. Like has been suggested in other build threads, I used those rebar ties to connect the expanded metal to the grate. I think it turned out pretty well.
I'm still gathering parts and looked 2 more places for the pot locally. Although I would MUCH rather deal locally, I'm just going to have to order it. Oh well.

Great build thread. Great idea about attaching the lid so you only have to cut once. I imagine it also gives a very clean and professional look to the inside edge.
I've got my grill in hand, but I'm having issues locating the tamale steamer in my local area.
