The smoke was a success. Here's a shot of the fatties. I kept the temperature around 225F and cooked it until the internal temps were 165F. This took about 2 hours 15 minutes.

Keith, if I can't come up with the other hardware, I'll look at cutting the notch. Right now I like the looks of the port instead.

After looking though the other threads and with Case's reply, I went ahead and put the top rack at 4" below the rim of the pot.
I can't find the lamp repair things in the house, so I'll have to do something differently or get another set of those.
