    Yup, another Brisket thread.

Nice looking brisket. How often do you tend to the wood overnight?

    Any Freemasons Here?

I'm a live-and-let-live kind of person and believe folks can hang out in whatever group/organization they like so long as they are not endangering the general public.

    Peasant Bread

Good looking bread. I have a no-knead recipe I use. The challenge I have had in the past is if I'm was not careful with the amount of yeast the bread can have a "yeasty" taste. I have gone to weighing everything rather than using measurements by volume, and it's a much nicer tasting bread.

    Marketplace Insurance changes for 2026

We are fortunate in that the wife and I have Kaiser here in California. I know there are folks who would not give Kaiser the time of day, but we have had them for years and have been satisfied. We have used their specialists quite a bit. The Senior Advantage Plus (includes dental) is $86 a...

Attention Breadmakers: Bromide vs. Iodide in processed flour

This has been very enlightening. I have never given much thought to flour and always thought it was....well.....flour, aka, ground wheat and nothing else. I buy the 50 lb. bag at Smart N' Final. Looks like I need to go see what else is in it.

Tribute Brisket not smoked from my Dad's recipe

A great fix-it-and-forget-it type of recipe. I would imagine the sauce would be pretty decent on mashed potatoes. Good job.

    Why spend the money?

I completely agree....................... In the relatively short time I've been smoking I have discovered the better we manage the temperature the better the outcome. So....temperature first. Second....providing protection from the elements; wind mostly, so as to maintain a more consistent...

Time saver for filling vacuum sealer bags

Reminds me way too much of my days as a kid slinging fries at McDonalds.:emoji_grin:

Vacuum sealer questions - UPDATE, bought the...

I just looked at the V4400 on Amazon. Pricey at $235, but it is a nice looking unit. I think the game-changer is they moved the bag cutting to the top of the machine, which brings the vacuum slot down closer to the counter. I'm not certain about the sensor. It may be a weak point in terms of...

    This weather here.....dang!

As a fellow Northern California citizen I have been very happy with our "seasonally cool" weather. I'll take it over the years where we were in the 100's in April.

    Spicy drums w/zest

Really nice color on the drum sticks coming off the grill. I'd need to cut back on the spice, but the flavor profile is certainly there.
Great deal on LEM Grinders!
