    WSM in Michigan

Yup.... the wind is what gets you. You can buy a welding blanket and some big spring clips, that combo works well for both extra insulation and wind break. Take a piece of rope or string and wrap it around your WSM, then measure the amount you needed to wrap around your WSM and add about a foot...

    Savory pancakes

A really good twist for savory pancakes: blue cheese and bacon (or sausage) in the batter, and top with some maple syrup. Don't go to nuts on the blue cheese, just enough to give it that nice savory flavor.

Breakfast taco using melted cheese as the "shell"

I think my cardiologist would kill me.... but I don't care! That looks amazing!

    Foolproof hash browns

We buy the small camping sized packs at Costco and I found the large cup brew option on my Keurig fills it perfectly. That's my super easy, guilty pleasure method for doing hash browns... lol. I saw those dehydrated potato's for years and swore I would never buy them, then a friend told me they...

    Lump coal VS Charcoal

I'll see your three briskets and raise you four pork butts! LOL http://www.smokingmeatforums.com/t/154156/the-answer-to-the-question-how-much-meat-can-you-put-into-a-22-5-wsm I have used both lump and briquets and still use both depending on what I'm cooking. For any cooks less than 8 hrs. I...

A hairy mom and equally hairy little one visited my deck

There was a break in at an art gallery on the Oregon coast last night, when the cops got there they caught the culprits in the act:

    New and has no idea.....

I second the build of a UDS (Ugly Drum Smoker - they aren't actually ugly). You can build a good UDS for under $100 that will work great and last a long time. Only need a few basic tools, and there are lots of instructions on builds in the forum under supplies and equipment section. I have the...

    Green Chillies

Oh if you really want a rude awakening do that with some habanero's. I was smoking some pork butts the other day and my neighbor came over with a small paper bag FULL of habanero peppers. So I cut them in half and tossed them onto the smoker for about 2-3 hrs. Then into the dehydrator till they...

What's the most you've ever cooked at once? By yourself or with others.

I think that's the chicken version of 9/11... lol. Most I ever did in one cook was about 90 lbs. of meat for a party my folks were throwing. The impressive part was I got it all into my 22.5" WSM in one load - 4 pork butts and 3 briskets.

    Smoking two BIG turkeys!

I have done 22-23 lb. birds on my WSM without any problems, but I do run it hotter for big birds.

    Buying my first Smoker

You can cold smoke with a WSM if you buy a A-MAZ-N smoker. I have one of the original sawdust ones and use it in my WSM to smoke cheeses.

    Minion Method Question

Whether or not you will need to refill or just use one basket depends on your smoker and how big your basket its. If your smoker has a lot of air leaks or is not efficient then you will probably need to reload mid-smoke. The way to re-load mid smoke is to have a chimney starter handy. You need...

    cleaning my smoker

No paint on the inside! If you want to use a cleaner I suggest Simple Green - it's non-toxic. You could high heat burn the inside, let it cool, scrub it with Simple Green, rinse well, high heat it a 2nd time, then re-season. The 2nd high heat is strictly to dry it and burn any cleaner residue...

    wsm 18.5

Changed from a Chargriller to a 22.5" WSM 6 years ago and almost felt guilty at how much easier it was to use compared the Chargriller. Go for it!

    Thinking about a WSM...

Really the only benefit is the extra room, both units perform well and are built with the same quality. I have the 22.5" and love having the room, but I do a lot of extra cooking for the neighbors plus our family of 4. I usually notify my neighbors when I'm firing up my smoker and have some...

    Big green egg vs weber

If you want to look at Weber from a cost stand point I would suggest look at getting a Weber Smokey Mountain and a Weber Kettle. Use the smoker for smoking and the kettle for the high heat grilling. You can buy a brand new 22.5" WSM for approx. $400, and then pick up a used kettle off of...

WSM using a lot of charcoal

Wind it the biggest enemy, I have a 6 ft. x 8 ft. welding blanket I use to wrap mine on windy days, and it works like a charm. I fill my pan with hot water, and on one 20 lb. bag of charcoal I can run at least 18+ hrs. even in the dead of winter on a windy day.
