    You can cold smoke with the Bradley, but you need the cold smoke apparatus. Here's, a pic of my cold smoked breakfast sausage in a muslin bag.

    Looks like you did a great job on the sticks. On mine, I use 90/10 ground beef. Do you make any other kinds of sausage?

    I can second what Reinhard said.  If you want to store for a long period of time, vacuum sealed bags are the only way to go.  Label and dated is smart as well.

    I'd use wild Alaska salmon...just 'cause it's much better than farm raised.  Here's a pic of the last Salmon I smoked.

    Did you change your vent at all?  I've found that if I close the vent, the temperature will not rise as much as when it's left open.
