I have a LEM #5 Big Bite. It does everything I want. But I would like a #8 or #12 to make it go faster. I can't feed enough into the #5 to slow it down, just limited to the size of the throat/head.
Onions can be toxic to dogs. There is a compound in onions, garlic and leeks that causes anemia in dogs. Some exposure may be tolerated occasionally but the AKC says to avoid all exposure to allium.

I don't think you will get any infiltration of insulation fibers into the inside of the smoker as long as you didn't drill any holes in the inside metal.
I bolted mine on filing cabinets (with added casters so they can be moved). They could be picked up and moved off my property but it most likely would take 2 people. Adding a chain to secure to a post wouldn't be too hard.

You may need to do an auto tune on your PID. If you do, put a brick or some sand in a pan to act as a heat sink. An empty smoker will not tune correctly because it heats up and cools to quickly. The idea is that the PID needs to "learn" with the smoker operating as you would use it with meat...
Check the wattage of the MES, then check wattage the PID supports. You don't really want to use more than 3/4 of the wattage the PID supports (some will say use only 2/3). So for an 800 watt MES element you would want at PID that supports at least 1000 watts.

I mix up my ground jerky, chill very well and then roll out to a 10 in x 16 in sheet about 1/4 in thick. I use plastic baking mat for the bottom and parchment paper for the top. Then I smoke the sheet of meat until done and slice in strips.
If there was insulation there when you opened it I would use a ceramic bat insulation made for kilns and such or fireplace fiberglass insulation.
There may be some air cooling required if there wasn't any insulation previously in place.
