    Hello SMF: I smoked a couple of birds over the weekend for a co-worker who said he would like a couple of chickens. I brined the birds in salt and brown sugar overnight. then in the morning I dried the chickens and spatchcocked (butterflied) the birds. I coated with Salt Pepper Onion Garlic...

    I too use nitrile gloves when doing food prep and handling i wash my hands dry thoroughly and use gloves. i change often esp between meats to prevent cross contamination etc. i use heat resistant glove on the smoker esp elbow length gloves when using a stick burner!     More than likely! she is very supportive of my hobbies because she knows it relaxes me and makes me happy so she gets behind it she isn't thrilled about what we are going to pay for it but she says if we have the money then do it! God love her! Happy Smoking, phatbac (Aaron)
