    Spring

I have put a couple of mods in my offset, I have added a metal cooking tray at 45 degrees where the fire box connects to the main chamber, it helps to deflect the heat which stops the food cooking a bit too quickly.  Depending on what I am cooking I also have a big water pan that sits on the...

    2016 UK Smokers Weekend

If you are like me and are busier than a busy thing, the only way is to put the date in your diary and call it booked, otherwise something else is bound to crop up as it always does  Is it me, but does life seems to be getting more busier? I don't remember being this busy 10 or 15 years ago.

    "Proper" Ribs

I'l second that, Bookers ribs are fantastic, I still have a full rack in the freezer from last year. Hiya Mark, I always use the 3-2-1 method. I was cooking a Brisket at 300 degrees  and threw a rack of ribs in with them, and they were the best ribs I have ever cooked, they seemed to be a bit...

    Roll Call

Hiya Crispyferret, welcome to the forum.   There are other substitutes that you can use instead of salt & sugar, Lo Salt is one of the alternatives and has a lot less sodium in than regular salt.  As for sugar you want to use sweeteners from the Stevia plant, the product is called Truvia and...

    First Attempt At Canadian Bacon

    Salmon on offer at Tesco

It's a good offer.  It is cheaper buying a whole salmon and having it filleted, than buying  individual fillets.  The fishmonger weighed out a couple of fillets and it was £16.00, where a whole salmon of approximately the same weight cost me a tenner.

I have been using Apple which I love, thinking of adding some Hickory to it, what ratio do you suggest?  As I have 3 pork loins ready for the smoker tomorrow.
