Ive never done a tri- tip in my life...ive wanted to for a very long time and always have my eyes peeled when at the store in hopes of finding one ... Well... The only ones ive ever found are pre marinated and I just never had too high of hopes for them. This cut is just not common around...

I agree with what the others have already stated. I do think drying the skin in the frige overnight goes a long way... Moisture has to leave the skin before any crisping action will take place... It also forms a pellicle for the smoke to adhere to. And as mentioned a mild wood like a fruitwood...

Hormel is what I used... But it was the family size canned.. I'm able to open both ends on that can and the slices are bigger.
The only thing that holds them together is getting them really crispy....i could see it beeing very difficult to make a sandwich patty...
I think for me I would be hard pressed to get a good picture of clean smoke. Sometimes I'll see some thin blue smoke..other times you cant see anything at all.. I know when I have a clean burn even if I cant see any smoke because i can smell the wood.. And it should smell like the wood you are...
