    Cool to hear. I always knew about mutton in Owensboro but never went. I grew up on Que in Paducah (Starnes) and Kevil (Leigh's) and maybe place or two in La Center. (Ballard County is where our relatives are - I grew up about 1 hr north)

    Freezing pulled pork???

    Take your RIG. Come on. Freezing PP does great. Add any finishing sauce after you re-heat with apple juice. Search for 're-heat pulled pork' and you will get lots of info.

    No charing, etc on my wood support frame either. But I would still stay safe and put something down as a prevent action. Agree that other things start to happen if you go up to 325-350, I did this for 3 straight turkey smokes and it melted my exhaust threads until it fell out. (PVC)

    Kentucky BBQ question (feels good to be back)

    Smoked mutton started in Owensboro, KY I am told. I never had it much. (grew up about 90 min away) BBQ in KY in the western end of the state is always pulled pork on a bun with a light vinegar based sauce served on the side. (follow the sticky in the pork section and you will be fine)...

    Correct. I find with the lump it just does not stack as well so some sort of 'chute' helps to keep it out of the way. I have not done this and the lit coals will not get enough oxygen and might be snuffed out.
