Thanks for the story. Memorial Day is always hard for me as well. One of my good friends who was like a mentor in the military killed himself right before Memorial Day a few years ago.
When I was smoking sausage, I was turning the smoker itself on and off to try to regulate the temp. Sausage ended up coming out fine. When I had the cold smoker on by itself, it would get too cold, down to 129 and I was trying to keep it at 180.
I'm smoking my first brisket on my new old offset smoker this weekend and I was wondering if anybody had any tips on controlling the temperature and any other tips on it.
