    smoking turkey

I smoked the turkey I had this past weekend, which was between 10 1/2 and 11 pounds.  As this was my first time I didn't brine or inject it, I just rubbed it with a SPOG rub on one side and a spicier poultry rub on the other.  I also put some butter under the skin on 1 side.  I smoked it on my...

    007 Baked Pepperoni Pizza Rolls!

I did mine on a regular grill at the lowest temp I could get, which was still pretty high since I kept the lid closed the whole time.  I think I only left mine in the fridge for 10  minutes or so.  I did brush them with olive oil, and most of them were brown, although some did lean toward dark...

    smoking turkey

Thanks, everyone, for your input.  I plan on doing one side with a SPOG rub and the other with a spicier or hotter rub.  I don't plan to brine it, but I may inject one side of it to see how that makes a difference.  I had said I would use apple wood for the smoke, but I may use a mixture of...

    smoking turkey

One other question for everyone.  Since this will be a practice run and my first smoked turkey, I thought I might try a few different things on the same turkey just to see what we prefer.  I plan on spatching it and I would like to try a different rub on each side of the turkey and maybe inject...

    007 Baked Pepperoni Pizza Rolls!

I tried making these on my grill last night, and they turned out OK.  I don't think I put enough meat, sauce, cheese in them, and I may have left them on a little too long while I was doing some work outside, but they were still pretty good. FWI, did you use direct or indirect heat to make...

Do I need to watch the salt content of the rub as well?  How much does putting rub or fruit/veggies inside the cavity of the bird affect the flavor?

Thanks, Dirtsailor, for your quick reply.  Will the rub affect the taste of the meat in a negative way since it is already injected?  Is it better to put the rub on the skin or under the skin?  I have seen where people do it both ways.

    007 Baked Pepperoni Pizza Rolls!

FWIsmoker, these pizza rolls look great, I will definitely make these.  My kids would eat Totino's for every meal if we let them, but I have no doubt they would think these are much better.  Since I'm in NW Ohio and you're in NE Indiana, maybe I can come over and pick some up next time you make...

    smoking turkey

I got a 10 1/2 pound turkey to do a practice run for Thanksgiving.  It was only after I got home that I noticed it had been injected with a brine solution - I forgot about looking for a natural bird without the solution.  Will this affect how I prepare the turkey for smoking?  I probably won't...

    sauce and rub ideas

While looking for recipes on this site, I have noticed that some of them that I thought I would like use alcohol as an ingredient, mostly whiskey.  Is there something that can be substituted for alcoholic beverages in recipes that call for them?  We don't have alcohol in the house and I don't...

No, I haven't tried jerk.  I will look for that, thanks for the suggestion.

    sauce and rub ideas

I am looking for suggestions for some sauces and rubs that I can make at home.  We don't care for the vinegar-based sauces in our house, but we do like tomato-based ones.  We like thicker sauces that are sweet but not overpoweringly so, with a little heat (I am a fan of more heat than everyone...

    smoking turkey

Thanks, dirtsailor, for correcting me on the looks of a spatchcocked turkey on the table.  those are beautiful pictures. when you spatchcock a bird, does it speed up the cooking time since it is more flat on the smoker?

I know if you spatchcock a turkey it probably doesn't look quite as nice on the table as a whole one, but would that alone speed up the process, besides the higher cooking temps?

    smoking turkey

With Thanksgiving coming up fairly soon, I am going to do a practice smoke run with a 10 - 12 lb turkey.  I plan on brining it overnight .  If you brine a turkey this size, is it necessary to inject it to keep it moist? I plan on using apple wood for the smoke.  Does turkey, or poultry in...

    Turkey in the WSM

Beautiful looking bird, Richie. I'm thinking of taking a practice run with a turkey in the near future.  I see from previous posts that a smaller bird is better, so I will keep that in mind.  I have seen a lot of posts where people use SPOG rubs (I think that means salt, pepper, onion...

    kingsford charcoal smoker

Is it possible to buy and add vents to this smoker?  I have seen other posts and videos about making modifications to other smokers, but I am curious if anyone had tried it with this one.

    advice needed

If by the smoke or fuse method you mean putting the charcoal in a semicircle or similar shape, and putting lit charcoal at one end of the pile to let it burn around, then yes, I did try that once.  It did seem to hold the cooking temp pretty well that way.  As my wife likes Black Friday...

    advice needed

I am a newbie to smoking, and while I love the taste of meat done over charcoal, I have been thinking about getting an electric smoker.  I have 3 kids who are all involved in sports or activities of some kind, and I don't always have time to babysit a charcoal smoker.  So I was looking for...
