    Subscriptions Only?

OK, I must have messed something up somewhere, but can't figure out how to undo it. Unfortunately, with overtime, family things, etc., I've been MIA here. I still manage to get some meat smoked now and then. My boy is doing great at Le Cordon Bleu. My nephew is doing good for the most part, but...

    Stuffed Burgers and ABTs

Thanx everyone for the great comments. The burger pocket press looks cool. Watched a video on it. Great idea. The ABTs were incredible. They're a standard now and we usually buy 20 or more jalapenos to feed the neighbors as well. I made a batch of 80 for a graduation party. Used the same...

Grilled Lamb Chops and Le Cordon Bleu

Greetings to all! I've been really busy with lots of things, so I've been absent from the site for a while. I only have one picture of tonight's meal, I hope that will suffice for a re-introduction...  A few weeks ago, my boy calls me. He's got great news and wants to let me know. So, I had...

    Stuffed Chicken Breast

I like asparagus to be just a tad crunchy. My first thought was that this would be very soft. It came out really close to perfect, slight crunch and no mush. I was really surprised, also, how much flavor the lemon slice added. The orange, not so much. Definitely on my do again list.

    Beef Back Rib Rub?

I think that's a typo. That would be way to much sugar for me. Here's a link to what I was looking at: http://answers.yahoo.com/question/index?qid=20071023083952AAKKQY9 It has the granulated sugar listed only once.

    Dry Alder

I'd be a little worried that it's been chemically treated also, if it was kiln dried. Hard to way what their process was for preserving the wood.

    Beef Back Rib Rub?

I haven't tried MDM Rib Rub, so did a quick search on it. For sugar, it has both white and brown sugar, 1/3 cup each. If I were to make it, it does sound good, I would use 1/3 cup Turbinado sugar and 1/3 cup dark brown sugar.

    Stuffed Chicken Breast

Thanx everyone. I've used the Kickin' Chicken on other stuff, as well. I wasn't sure I'd like it when I bought it, but it's one of my favorite blends now.

A Doctor Saw My Smoked Porks on FaceBook: Ugh

I just went to see my doctor last week. In our regular conversation about food, he said the obvious... poultry, fish, veggies, etc are good. Pork, beef, cheese in moderation. Fiber, lots of fiber. That's the key, since the fiber is the main escape route for cholesterol. Only thing he was upset...

    Stuffed Chicken Breast

I would say the Kickin' Chicken would be hot by a lot of people's standards. I love hot food and use lots of peppers. If you use more than a little, you'll notice it, for sure.

    Stuffed Chicken Breast

Well, I haven't posted much for qview lately, so I'm showing the chicken I did today. It's not much, but was quite tasty. Only me today, the gathering is tomorrow. I partially split a chicken breast to form a pocket. Rubbed EVOO inside and out. For spice, I used Weber's Kickin' Chicken. A...

This is weird: viewing who's online...

I noticed the same thing as far as number of users for a couple of days now. I figured it was just my browser getting confused somehow. It'll be interesting to find out what happened.

Salt substitute that doesn't taste funny

I've been using Mrs. Dash seasonings. They also make a variety of marinades. They're all salt free and, I think, mighty good. After I went low sodium, it seemed to me that the food was much better tasting without the salt.
