Dan, Cure #1 prevents botulism while your jerky is drying,salt won't do that!

Crazymoon has hit the nail on the head. They used to salt meats and fish for storage but they used huge amounts of salt to draw the liquid out and that helped with storage. However, it makes the meat unpalatable in my opinion. Also, it is not as effective as curing salt with nitrates.
