Thick smoke is bitter. Get it too thick and your adding creosote, plus the carcinogens that come with it. The idea behind smoking is to cook, preserve, and add a flavor to your meat. Not to add meat to your smoke.
As a Chef I can tell you that it isn't cheap to go into the food business no matter what branch your doing. Everything has to be NSF certified. I would certainly check your local restrictions to see what you need to do to be legit. You might be able to get away with a unit that is not so...
That would be .70 a pound for the pellets. At a $1.43 a pound that 20 pound bag would cost you almost $30. This actually is much cheaper than what my gas smoker is costing me now for fuel.
I was and still am very adamant in my view of a smoke hollow that I purchased that is Chinese junk. And I stand behind that statement and am willing to prove anyone who thinks otherwise wrong. However I knew that I was not purchasing an American made quality product when I took it through the...
It is amazing the differences that can be had with these Smoke Hollow smokers once you modify them past the point of being original. A few mods will make a world of difference in how these things work.
If anyone is in the East TN area and would like mine I am willing to depart with it. My next...
Sorry if I offended people with my experiences with my Smoke Hollow 44" smoker. The second question asked by the OP was inferring that they wanted to know what we thought. I have read this thread all the way through and see positive and negative points.
Should we not try to educate people on...

As for your box probe. I would suggest trying to get it as close to dead center of the cabinet as possible. No you do not want this touching...
Also these smokers with the glass door. Good luck with that, I can only imagine the heat loss is even greater with these, just a big old hole cut right in the middle of the door. If I had one of those I would go to my local hardware dealer and buy a tube of high heat gasket maker and take the...
These things are cheaply built with very thin sheet metal. The manufacture used regular grill burners in it to compensate for the low quality.
Things I found to help smoking in sub 60 degree weather were to wrap the smoker. I use a couple of old wool blankets that I cut to fit over the smoker...
Any old wood stove gasket will do it.
And Chad doesn't know his head from a hole in the ground. You can prove this by getting technical with him. If you measure with calipers the diameter of the openings I bet both will be different. He doesn;t know what there supposed to be, and if he goes...
I emailed the folks at Rec Tec, and have struck that grill off my list. Seems they are sourced from China. I refuse to pay a grand plus shipping or drive to GA and pay tax for something that should be made right here.
Especially when it is an outside appliance that I would want to last for...
To say your from the south and we haven't seen or heard of pellet grills made me laugh.
I have been debating a Yoder for quite sometime. Been using a propane smoker for the past year and right now I am just not totally sold on it. It smokes fine but can be overpowering when you don't really...
