That's a great idea. It's kind of scary that the stock thermometer is that inaccurate. Hopefully, the ribs turn out ok. I'm going to use your idea for future smokes!
Thanks, guys! I just did the boiling water test with the Maverick and it read 210°F, so I think it's pretty accurate. The probe is sitting about an inch above the top rack where my ribs are.
Also, I updated my location to Troy, Illinois, which is about 20 miles east of St. Louis, Missouri.
