Wood Chips
I've got a MES 30 and have smoked a few shoulders and picnics. Each time I smoke the wood chips just turn black and don't really turn to ash. I'm cooking at 225 and using dry chips. I get the thin blue-ish smoke and replace the chips when they stop smoking, every hour and a half or so. I feel...- wcutink
