I am using an MES 30. I have used my Maverick in it one other time, but just used the BBQ temp probe and it seemed pretty accurate. Im using 21mm collagen casings. I was planning on smoking 4-5 hours, based on other times/temps i have read in the forums.

Got the credit card out today and made my order. Went with the AMNPS Package, the Maverick ET-732 thermometer (i hope its worth it!) and a couple extra 5lb bags of pellets. Cant wait until it all gets here....the smoker will be rolling as soon as it arrives.
I have an MES 30, and although i really like it, when the temperature outside is warmer i cant get the smoke generated due to the digital temperature gauge. When the temp reaches the set point and my burner shuts off, no more smoke. I think the AMNS is the way to go. I see the "New" Pellet...
