500 gallon offset fire box measurement help

Hello there! So I am attempting to build an offset out of a 500 gallon horizontal tank. I have a question regarding the fb. Right now I have a measurement of 36LX24Hx24w. Will this be sufficient or should I go larger? I was going to use half of a 250 gallon horizontal tank, but those plans fell...

    Briskets coming out tough

Thanks for the info. That's what I was thinking. Is there a way to fix this? I know the top is going to be warmer since heat rises, so I'm not sure if I should put the briskets up there. I will try to post pics of the setup today.

    Briskets coming out tough

Good day. Has anyone had issues with their cc not cooking properly after a top rack was installed? For some reason the point of my flat always dries out and about a quarter of the way in the brisket is cooked like it's supposed to be. I'm puzzled!

Tel-Tru analog not reading the same as digital ones

Al, thanks for the response. It's actually a 120 gallon custom offset. I put the 2 digital ones next to the analog (in the center of the smoker at grate level) to see and the two digital were reading the same. Very confusing considering the tel true used to read the same. And they all read 215...
