With mine I can cook any temp. I have raised the temp to 400 once for pizza but I don't usually run anything but in the 200's depends on the meat. Chicken is nice to smoke at 250 then run temp up to 325 for last half hour to crisp up skin. No need to fire up my oven to heat up my house. With...
You can do a tuning plate or do something that would be the equivalent. I would try a 6 inch angle iron centered over your burn pot. Plate off each end so the heat gets cupped in the V channel. If fairly level to having a slight incline away from burn pot will direct heat more to the tail end...
It's a non insulated unit. Likely for rising breads. The temp was never high. You could add a cold smoke generator for smoking cheese. Or fix heat element and cold smoke generator to smoke fish perhaps. But it will not go past 210 degrees on the highest setting. If it can go that high.
Is the door glass or plastic? The smoke will blacken it regardless and if plastic you will have to keep temps low. Plastic can withstand some heat but limited to the 200- 250 range. Likely the highest rated temp of the unit would be the safe area for it. You could easily change that to metal. I...
Hi Dennis,
That's a great looking build for sure. I have a couple of questions for you. 1) Did you put any venting in the floor area to create draft? 2) Have you attempted to do controlled heat runs? Have you got steady 220 temps held for more then 3 hours? Or even lower temps.
I was...
There is a good YouTube video on modifing the NBBD. It gives a lot of good tips on how to get this smoker to perform better... As we know the thickness of metal on that smoker it will tend to make you run hotter fires to compensate for the heat loss due to weight of metal. Its not a deal breaker...
Wanted to bring an update to this build. It has been over 6 months now since I took on this build. The build is for the most part finished but it always has room for possible growth. The space I currently have in it, is not used to its max capacity. I rarely have a need for more capacity then...
I have owned in years past cheap offset smokers from brinkmann. Couple of them as matter of fact. They lasted a few years but I never did really big long cooks on them. They was just fish, chicken, small roast cooks that rarely got over a few hours. I got a Brinkmann Pro about 13 years ago. I...
3-4 year gas grill. The gas side will wear out before the charcoal side of it. It is not built very heavyweight in the steel used. Your green egg is a far superior smoker. If your going gas grill get a stainless model. Those hold up better. The heavier the off set smoker is built will help...
